Breakfast for dinner is a super quick and easy dish I love to make. Scrambled eggs, egg sandwiches and pancakes are my go-to when I have a headache or don’t feel like something super heavy. Comfort!
These pancakes are super easy and packed with banana bread flavor! I have Kodiak cake pancake mix that I use. The ingredients are whole foods, packed with whole grains/fiber and taste really good.
I added a smashed banana, cinnamon, vanilla and fresh nutmeg to make them taste like banana bread. I figured it would be a little banana-y and maybe taste a bit like cinnamon but I was WOWED by how much flavor these pancakes had! They were super rich from the vanilla and nutmeg. Love.
Banana Bread Pancakes
1 cup pancake mix (use your favorite)
1 ripe banana, mashed
1 teaspoon really good vanilla (imitation just won’t do)
1 teaspoon cinnamon
1/2 teaspoon fresh nutmeg, grated
1. Mix pancake mix with water until you get the consistency you like
2. Add banana, vanilla, cinnamon and nutmeg into the batter
3. Fry on a skillet until golden brown!
