Lettuce wraps were a HIT for me in college. I loved them and sometimes miss them.
I’ve made them a few times since. These photos show it made with ground beef, but I especially like ground turkey too.
Plus I feel super healthy eating a lettuce taco. It’s awesome.
The fresh ginger is the key here. I was always afraid of the weird looking root. But it was super cheap and easy! Just peel and use a box grater. I store mine in the freezer. A lot goes a long way! These have a ton of flavor from ginger, soy sauce and a bit of soyaki sauce from Trader Joe’s.

4 large butter lettuce or iceberg lettuce leafs
1 teaspoon oil
1/2 onion, chopped
1/2 red pepper, chopped
1/2 pound ground turkey or beef
1 teaspoon fresh ginger, peeled and shredded
2 tablespoons low sodium soy sauce
1 tablespoon soyaki sauce (or other stir fry sauce)
Optional: shelled frozen edamame, shredded carrot, chopped nuts
1. Sautee onion and pepper in the oil until soft. Add meat and brown until entirely cooked.
2. Add ginger, soy sauce, soyaki sauce and optional veggies if desired.
3. Let cool a bit and spoon into lettuce cups. Top with nuts and soy sauce if desired.
Super easy and delicious!
