I have to hold myself back from including “quick and easy” to the title of every meal I make.
But the truth is, I don’t have the patience to make a long meal after work. I’m hungry! So, my meals are quick and easy. With help from meal prep on the weekend, this one came together in less than 20 minutes.
I pulled cooked rice and beans from the freezer and combined them with sautéed green peppers, onions and low sodium sausage. Lately I need some flavor in my food, so I added tons of black pepper, chili powder and oregano. Thew in a splash of homemade veggie stock to deglaze the pan (pull up all of the brown onion bits from the bottom of the pan) and it was ready!
Warm and delicious. This is a great (quick) week day meal! Enjoy!
1 green bell pepper, diced
1/2 yellow onion, diced
7oz of low sodium turkey sausage, sliced into disks
1 cup red beans, cooked or from a can
1 cup brown rice, cooked
1/4th cup vegetable stock, homemade or low sodium from a can/box
1 teaspoon chili powder
1 teaspoon oregano
salt and pepper
1. Sautee pepper and onions until soft. Onion should be browning.
2. Add sausage and half of the vegetable stock. Cook until sausage has some color on it.
3. Add beans, rice, remaining stock and spices. Season with salt and pepper. Serve hot
