Apple Cinnamon Oatmeal Bombs

I get into snack ruts. Pretzels or cheese sticks (even though I love them forever and always). Fruit or tortilla chips. All of these are great snacks but they get ollllld. I want something different.

I looked at recipes online for granola bars, but so many don’t make me feel good about the ingredients. I want something really healthy that I can grab on my way out the door to work.

So I looked into baked oatmeal and thought I could make it into bars. I found a recipe for apple cinnamon baked snack bars but when I was testing it out the batter was super runny. I figured the oatmeal would soak up some of the liquid if I baked them off in muffin tins and I was right! So these breakfast bombs were born. I love that they are more like oatmeal than a muffin (even though I love muffins). I can take them as a snack but they are filing enough to have for breakfast.  I wrapped a bunch of them up in aluminum foil and stored them in the freezer for quick snacks later in life.

Even though there is only 2 tablespoons of sugar they are nicely sweet from the apple and raisins. Snack rut broken!

Apple Cinnamon Oatmeal Bombs

Ingredients: 
1 egg

1 1/2 cup skim milk

1 tablespoon vanilla extract

1 1/4 cups quick oats

1 cup cooked quinoa

1/2 cup whole wheat flour

1/2 cup raisins

1/4 cup nuts, chopped (any kind- I used mixed)

2 tablespoons sugar

1/2  teaspoon cinnamon

1 apple, peeled, thinly sliced

Directions:
1. Heat oven to 350°F. Spray muffin tin with cooking spray.

2. Beat egg with milk and vanilla in a small bowl.

3. In large bowl, combine oats, quinoa, flour, raisins, sugar and cinnamon. Stir in egg mixture until  combined. Mixture will be runny, but it will thicken up in the oven. Fill each muffin cup and top with a slice of apple.

4. Bake 25 minutes or until bars are set.
