From My Table- Taco Day

Like stir fry, I make tacos/ nachos on a regular basis.

I have many versions, but I usually have some combination of black beans, quinoa or ground turkey on chips or a tortilla. I tend to have cans of beans or cooked beans in the freezer that I can pull out quickly and use.

This time around I made a quick guacamole and used ground beef from my parents. IMG_3270

I am kind of specific about my guacamole. It has to have a ton of lime juice in it. And can’t be too spicy. I don’t really like onion or garlic in it either. I made a perfect batch this time. It may be plain but I love it. Tangy, creamy and a bit salty. I’m a sucker for lime. I’ll share the recipe for the guacamole. As for the tacos and nachos, it is more of a formula….

tortilla or chips + meat or beans +  cheese + guacamole + plain yogurt + salsa + veggies

The Plainest of Guacamoles 

Ingredients: 

1 ripe avocado

1/2 lime

2 tablespoons cilantro

salt and pepper

Directions: 

1. Mash avocado with a fork.

2. Add lime juice and cilantro. Season with salt and pepper
