I never would have guessed that I wouldn’t be able to go through a loaf of bread before it gets bad. But cooking for 1 can be tricky. I tried putting part of a loaf in the freezer but it just didn’t taste good to me. So I made it a goal for myself to be creative with bread so I could buy it for a few meals without throwing the rest away.
I bought a loaf of fresh bread from Kroger. It is worth it to me to buy fresh since I don’t eat much and I like the taste so much better. I used it in 3 ways this week.
1. I tried to change up my morning cereal and have toast this week. Toast with butter and jelly.
2. I made grilled cheese and cheese sandwiches. I bought sliced cheese just to make grilled cheese this week for a quick dinner and made a cheese sandwich for a weekend lunch.
3. Croutons! I used about a third of the loaf for croutons. I tore the bread into bite size pieces, tossed them with olive oil, salt and pepper. Then roasted them in a 350 degree oven for about 20 minutes, tossing half way through. So good! I had them on a Caesar salad and again on soup later in the week. I froze about half and heated them in the microwave for 30 seconds. Still crunchy and delish.
I’m glad I challenged myself and got creative! Sometimes you just want a grilled cheese ya know?
