Kale and sausage soup. Another winter favorite! I have made this soup a few times now and love it each time. The potato and beans create a creamy base. The sausage and onion give it deep flavor and the kale makes it so rich and homey.
I adapted the recipe from Martha Stewart. Her everyday Martha recipes are awesome. Super easy and delicious.

Kale and Sausage Soup with White Beans
7 ounces of turkey sausage, cut into half moons
1/2 large yellow onion, chopped
8 cups of veggie stock
1 large white potato, peeled and chopped
1 bunch of kale, rinsed, de-stemmed and torn into pieces
1 can reduced sodium Great Northern beans
salt and pepper
1. Sautee sausage in a large soup pot until brown. Add onions and cook until soft.
2. Add veggie stock. Scrape the bottom of the pot with a wooden spoon to pick up the brown bits.
3. Add potato, let boil until soft.
4. Add kale and beans with liquid, turn down the heat and let wilt. Season with salt and pepper.
