How amazing are the colors? I pinned this salad after I read this post by Maria and finally re-created it this past week! It was delicious and filling. I loved all of the veggies and can’t pass up anything with quinoa.
This is a perfect salad to bring for lunch. I promise your coworkers will be impressed :)
Thai Quinoa Salad
1.5 cups cooked quinoa
1/2 cup red cabbage, shredded
1/4 cup carrot, peeled and shredded
1/2 red pepper, chopped
1/4 cup frozen edamame, steamed in the microwave until hot but still crunchy
1/2 small can Mandarin oranges in juice, reserve juice
13-15 whole roasted unsalted cashews, roughly chopped
2 tablespoons cilantro, chopped
1/2 lime, squeezed for juice
2 tablespoons reduced sodium soy sauce
1. Combine quinoa, veggies, oranges and cashews in a large bowl.
2. In a smaller bowl whisk together 2 tablespoons of reserved orange juice, cilantro, lime juice, soy sauce and pepper to taste. Pour over salad and mix to combine.
