So. Let’s talk easy dinners. I am all about dinner that I can prep on the weekend and throw together within 30 minutes after I get home or is ready and waiting for me in the Crock Pot. Sometimes I am so hungry after work I will eat dinner at 4:30- it’s fine. Here’s what was on my table this week…..
For week 1 I am going to share my “Fake-O Gyro” recipe. It is completely not a gyro at all, but it has some of my favorite Greek flavors.
I put 2 frozen chicken breasts in the Crock Pot and let them go with some water, salt and pepper while I was at work. I got the idea from this post. Part of the chicken I used for chicken salad, some for caesar salad and some for these gyros. When I made muffins this weekend I also roasted some garlic while I had the oven on. I used this method. Love weekend meal prep!
I spritzed some lemon juice over the chicken and stuffed it into a whole wheat pita with chopped tomato, lettuce, feta cheese and quick tzatziki sauce. Super easy and delicious!
Quick Tzatziki Sauce
1 cup plain 0% fat Greek yogurt
1/2 cucumber, peeled and chopped small
1/2 lemon squeezed, or a few hits of white wine vinegar
3-4 cloves of roasted garlic, smashed into a paste
Salt and Pepper
1. Combine all ingredients. Season with salt and pepper to taste.
